In the current employer field, I filled out the name of the company where I am employed presently.

However, by the time I can appear for the US visa interview, I would have left the company as I am serving my notice period currently.

Will it pose a problem during the interview?

I assume you are on your F1 OPT period. It is a gray area. It is always good to be in a job when getting a visa stamped. There may be questions on your employment, what do you intend to tell ?
