Please help in OPT extension RFE - Employment History

I received RFE (Request For Evidence) :

Please provide your complete employment history including start end dates and proof of employment for your initial grant of OPT.

If you work for employment agency or consultancy, you must provide evidence of the jobs you worked on and dates worked. If you worked remotely at client site, please note it in your employment history.

I work for an agency and work onsite as a contract employee. I submitted employment letter from my agency but they want more information. I am confused with " Please provide your complete employment history." What exactly they want here and what all documents should I give? Any ideas, suggestions?
